Monthly Cheese Selection – March 2010
Hafod Welsh Cheddar (200g)
Hafod is a traditional hard cheese handmade by Sam and Rachel Holden on Wales’ longest certified organic dairy farm, Bwlchwernen Fawr.
They only use the raw milk from their 65 Ayrshire cows to make Hafod. Ayrshire milk is rich in butterfat and protein, and is widely regarded as being ideally suited to cheesemaking. It is this unique combination of creamy organic Ayrshire milk and traditional cheesemaking techniques that give Hafod its buttery, rich and nutty flavours.
The name - Hafod (pronounced Havod) – is Welsh for summer place or pasture. In the farm’s case, Hafod is an area of meadow next to the river Aeron where all the cows graze as heifers before joining the milking herd.
Bwlchwernen Fawr has been farmed organically for 35-years, by Sam’s father Patrick Holden, Director of the Soil Association.
Crozier Blue (250g)
Crozier Blue was developed by the maker’s of Cashel Blue who have a long experience of Blue Cheese Making. This Farmhouse Cheese is produced from the milk of a flock of sheep recently established on the limestone pasturelands near Cashel, Co. Tipperary. Throughout the milking season the ewes are grass fed grazing the fertile grasslands of Tipperary producing the distinctively flavoured milk that gives Crozier a smooth buttery texture & a naturally sweet flavour balanced by a mild saltiness and delicious blueness.
Rachel (225g)
Rachel is made by Pete Humphries at White Lake Cheeses which is based near Glastonbury. The cheese is made from the milk of a herd of goats owned by Pete’s business partner, Roger. Pete loves experimenting with new recipes and he developed this rind washed goat’s milk cheese several years ago. There is no British tradition of washing the rind of goats’ milk cheeses so this is a very rare cheese which has become a firm favourite among goats’ cheese enthusiasts. Pete has an eccentric tendency to name cheeses after girlfriends and Rachel is named after a friend he describes as “sweet, curvy and nutty.” Not unlike the cheese itself!
Fine English Bath Ovals (100g)
