Key to cheese types

So that you will know which type of milk each cheese is made from, we have created a very simple key, which will denote whether the cheese is made from cows’ milk, ewes’ milk or goats’ milk. The key also shows when a cheese is made with vegetarian rennet, and when it is unpasteurised. You will see the letters in bold after each description.
e.g. Brie de Meaux C U

Cows' Milk = C
Goats' Milk = G
Ewes' Milk = E
Made with Vegetable Rennet = V
Unpasteurised = U
