Celebrate St. Patrick’s Day with some artisan Irish cheeses and Shamrock ‘green’ accompaniments.
Included in your celebration box are
250g of Cashel Blue, a soft, creamy cows’ milk blue made by the Grubb family at their farm in Tipperary. (Vegetarian.)
250g of Coolea, made by Dickie Willem on the family farm near the hills of Coolea.. The Willems moved to Ireland from Holland over 20 years ago and decided to make a cheese inspired by an aged Dutch Gouda. Coolea has a creamy texture and a firm golden interior. Its delicious taste is reminiscent of caramel and butterscotch, but with a balancing saltiness and acidity.
Cooleeney baby (250g) a Camembert-style cheese made by Breda Maher at the family farm in Tipperary’s Golden Vale where their Friesian herd grazes the lush green pastures. It is rich and full flavoured with a velvety texture.
We have added a jar of Fine Cheese Co. Gooseberry Fruit for Cheese (113g) to complement the Coolea and some Fine Cheese Co. Chive Crackers (150g) for soft cheese to flatter the Cooleeny.
